Design determination formula and shelf-life of new additive-free Mediterranean product

This study performed physical, chemical, and microbiological analyses to determine the best formulation shelf life of a new additive-free Mediterranean diet product. The spreadable creamed product was formulated with roasted peanut (32%) hazelnut mixed, sweetened dried grape (15%) sun-dried apricot (15%). Different storage temperatures as 25 oC, 35 45 oC were used for prediction accelerated shelf-life. Microbiological analysis, color water activity, textural free fatty acidity, peroxide number, sensory also two weeks periods during life. At period, activity measured below 0.6, microbial risk not observed. shelf-life at 25oC estimated 11 months by making regression analysis Arrhenius equation according values determined temperature oC.
